Cherry jam deluxe

Today I have a new recipe for you to boil down: a cherry jam deluxe. Very tasty, extra fruity and with that certain something. Therefore also “deluxe”, because in addition to delicious cherries, this jam also contains fine vanilla, the best chocolate and fine liqueur ... ♥

And what goes particularly well with cherries?

Right ... amaretto. The delicious Italian almond liqueur rounds off the whole thing in a really tasty and aromatic way. Besides, as you know, he comes from Italy. And I associate Italy with summer happiness and, of course, the most beautiful summer weather. And that's exactly what it's all about today: summer. Better said about the summer in a glass.

There's nothing like cherries ...

So I decided on cherries, as you can easily see. For me, cherries are one of the greatest delicacies of summer. Whether fresh or processed. For snacking, I prefer sweet cherries to sour cherries, but when processed, sour cherries are unbeatable. Last year I still cooked sweet cherries for once. The result is mine Cherry and kombucha jam. Something completely different with the delicious cult drink Kombucha. Cherry jam deluxe

Ingredients

  • 600 g Sour cherries (pitted)
  • 100 g Amaretto
  • 380 g Preserving sugar 2: 1 (preferably made from cane sugar)
  • or
  • 250  g preserving sugar 3: 1
  • 1 Teaspoon vanilla extract
  • ½ Piece of lemon, including the juice
  • 50 g good dark chocolate ()

Instructions

preparation

  1. Clean the preserving jars very thoroughly again or boil or sterilize them.
  2. Put a small spoon in the refrigerator for the gelling test later (*).
  3. Mix the cherries with the preserving sugar in a large saucepan and let steep for 1 hour.

jam

  1. If necessary, roughly chop the chocolate.

  2. Add to the saucepan with the rest of the ingredients for the jam and bring to the boil.
    Let it simmer for about 3 minutes and keep stirring. 
  3. Either leave in pieces or puree coarsely or finely as desired.
  4. Then do the gelling test (*). 
  5. After a successful gel test, quickly pour the finished jam into the prepared jars and close.

Notes

 

(*) Gelling test

At the end of the cooking time, remove some jam with a spoon and allow the hot mixture to drain off. If the last drop becomes solid, the jam will solidify too. Otherwise, the cooking time will increase by 1-2 minutes.

  2. If you don't like the jam in chunks, you can finely puree it for 20 seconds / speed 10.
  3. Then do the gelling test (*). 
  4. After a successful gel test, quickly pour the finished jam into the prepared jars and close.

    1. Dear Tina,
      I would put the cherries together with the preserving sugar in the mixing bowl and mix for 10 seconds / speed 4. Then let it steep for 1 hour. You can then easily see whether the cherries are still too coarse for you. If necessary, just repeat again. LG Sonja
