Apple red cabbage - healthy and tasty vegetable side dish for autumn and winter


Today I have the recipe for my delicious apple red cabbage. Many people probably also know red cabbage under the name red cabbage or red cabbage, but no matter what name you know it by ... as a typical winter vegetable, it goes perfectly with all kinds of braised and game dishes, various roasts and, of course, especially with the classic Christmas dinner with goose or duck and dumplings .

The apple red cabbage is wonderful to prepare and is not only delicious, but also very healthy. Because red cabbage contains a lot Fiber and phytochemicals, such as Glucosinolates and anthocyanins. The anthocyanins also give the red cabbage its strong purple color.

This apple red cabbage has a rather mild taste, just as my family members, especially my children, like it. If you like a red cabbage with strong acidity, you can either use a little more balsamic vinegar or a stronger vinegar. Red wine or apple cider vinegar would also go very well here. I dose the spices a little more generously for our Christmas dinner, especially the cinnamon. It tastes really delicious and is wonderfully rounded off with a little mulled wine instead of red wine.

Incidentally, red cabbage can be kept for up to two weeks in the vegetable compartment of the refrigerator. If it is cut, it should be wrapped in cling film. So it can be bought in good time and prepared or pre-cooked if necessary. If I have the Red cabbage with apples so pre-cook I prepare everything according to this recipe up to point 7 and only let the apple red cabbage cook for about 45-50 minutes. Then I let it cool down and then put it in the cold. (This is how it can be frozen wonderfully.) If necessary, I proceed as from point 8 in the recipe ... so I add the apples and the jam and let everything cook again for a few minutes until the apples are soft.

There are voices that said that heated red cabbage tastes best ... how do you see that? Do you prefer your red cabbage cooked fresh or do you like to prepare it or even wake it up?

In any case, I personally find it very pleasant when I have almost finished cooking my red cabbage for the holidays ... then there is usually enough to do. But here's the recipe for you first ... ♥

Ingredients for the apple red cabbage:

  • 1 red onion
  • 20g oil or (vegetable) lard
  • 600g red cabbage, ready to cook
  • 250g apples, peeled, pitted
  • 100g strong vegetable broth, preferably from 100g water and 1 teaspoon instant vegetable broth (Recipe here)
  • 150g red wine or mulled wine (alternatively vegetable broth or apple juice)
  • 30g balsamic vinegar
  • 40g brown sugar (or an alternative sweetness)
  • 1/2 -1 teaspoon salt (depending on taste)
  • Two or three pinches each of pepper, cinnamon, cloves and allspice
  • 60g raspberry jam without seeds (Recipe here) or alternatively, cranberries from the glass.

Prepare red cabbage:

  1. Slice the red cabbage into narrow strips and set aside.
  2. Finely chop the onion.
  3. Heat the oil or lard in a large saucepan and add the

  5. Add the red cabbage and let it sauté briefly.
  6. Deglaze with the vegetable stock.
  7. Add the spices, salt, brown sugar and red wine and simmer for about 1 hour. Stir occasionally
  8. In the meantime, cut the apples into cubes.
  9. Approximately 5-10 minutes before the end of the cooking time Add the apples and the raspberry jam, fold in briefly and cook for the rest of the time until the apples are soft.
  10. Finally, remove the bay leaf and season the red cabbage again.

  Prepare red cabbage with the Thermomix:

  1. Put the red cabbage in pieces in the mixing bowl and use the spatula to chop for 5 seconds / speed 5. Then decant.
  2. Halve the onion in the mixing bowl and chop for 4 seconds / speed 5, then push down with the spatula.
  3. Add oil or lard, sauté 4 min / 120 ° C / speed 1.
  4. Add red cabbage, 4 min. / 120 ° C / speed 2.5 L.inkslauf with steam.
  5. Add spices, salt, brown sugar, vegetable stock and red wine, 60 min. / 100 ° C / level 1.5, L.inkslauf.
  6. In the meantime, cut the apples into cubes.
