Greek rice salad

In this Mediterranean and vegetarian rice salad, firm brown rice, fresh cucumber, crunchy peppers and aromatic black olives meet spicy feta. Rounded off with a mild dressing, this is a perfect and healthy summer treat!

Now you might say, oh dear, whole grain rice is not mine at all ... No problem! You can also use any other rice that you particularly like. However, I found the salad really great! Personally, I don't particularly like most types of brown rice. This time I have this for the first time Round grain whole grain rice tried. A round, almost pearl-like grain of rice from organic cultivation that is pleasantly firm to the bite and stays that way in the salad. This rice also has a significantly higher proportion of valuable nutrients than the peeled white counterparts. For me, brown rice has a delicious nutty taste and a pleasant mouthfeel. Not to be compared with the usual slightly scratchy feeling when chewing.

Ingredients

  • 250 g Natural rice or rice of your choice (| I: Wholegrain Bio-Tondo Integrale)
  • 200 g Cucumber (cucumber)
  • 150 g Cherry tomatoes
  • 150 g Red pepper
  • 200 g Feta ((preferably low in fat))
  • 100 g Black olives, pitted (| e.g. Kalamata )
  • 1 Spring onion

dressing

  • 3 Tbsp white wine vinegar
  • 3 Tbsp virgin olive oil (| I: Fior d & #039; O)
  • 1 Tbsp parsley
  • 1 Teaspoon sugar (| i: Rice syrup)
  • 12 Garlic cloves)
  • Pepper ()
  • salt

Instructions

rice

  1. Cooking rice Wash rice in a colander.
  2. Cook according to the instructions on the packet.
  3. Then let it cool down.

dressing

  1. Mix the dessing For the dressing, press through the garlic and finely chop the parsley.
  2. Mix with the other ingredients for the dressing and season with salt.

salad

  1. Cut vegetables, clean the peppers and cut into small cubes.
    Wash and dice the cucumber.
    Also cut the feta cheese into cubes.
    Halve the cherry tomatoes.
    Cut the spring onions and olives into fine rings.
  2. Prepare the salad Then mix everything in a large bowl.
  3. Seasoning the salad Mix the dressing with the salad and season to taste.
    Gladly let something go through.

Notes

 

If there is anything left over, the lettuce can be stored in the refrigerator for 1-2 days.

  3. Then let it cool down.

dressing

  1. Mixing the dessing For the dressing, put the garlic, spring onion in pieces and the parsley in the mixing bowl for 4-5 seconds | Chop level 5.
  2. Add the remaining ingredients for the dressing, 20 sec. | Mix level 3.
    Then decant.
    Season to taste with salt.

    Yes, this salad is really great I do this often, but I still change it and add 1 clove of garlic to the dressing and if you like it a bit spicy, you can cut a 1/2 chilli pepper into small pieces, but be careful with the seeds and a little mint with it the greek, kritharaki noodles were also very tasty
