Hot Chocolate deluxe

 

Ingredients:

(for 4 servings)
  • 800ml milk
  • 100 g (favorite) chocolate in pieces
  • 4 tsp cocoa (not Kaba!)     
  • 1.5 tsp vanilla extract / vanilla sugar              
  • 10 g cornstarch (pudding powder of your choice / wheat starch / corn starch)          
  • 1 pinch of salt
  • Nut nougat cream / Nutella (optional)
  • 200g cream, well chilled
  • 1 tbsp powdered sugar (possibly a little more to sweeten)
  • 2 teaspoons of SanApart / cream stiffener

 

optional:
  • 4 tbsp (or more?) Homemade Baileys (Click here for the recipe...)
  • 40g mini marshmallows
  • 4 teaspoons of grated chocolate
  • small sugar pearls                                               

Preparation:

  • Optional: Coat the cups on the inner walls and on the upper edge with nut nougat cream / Nutella and dip into colored sugar pearls as desired. I then put the cups in the fridge so that the nut nougat cream sets and doesn't dissolve in the hot milk when I serve it.
  • Beat the well-chilled cream with the powdered sugar, 1/2 teaspoon vanilla extract / vanilla sugar and, if desired, 2 teaspoons SanApart / cream stiff until stiff. Then put in a cool place.                                                                    Thermomix: Insert butterfly and beat stiffly without time setting at level 3 (under observation).
  • Finely chop the chocolate. Then put the milk with the cocoa, the cornstarch, the remaining vanilla and the salt in a saucepan and stir well. Bring to the boil while stirring briefly, switch off the stove, add the chocolate and then let it melt in the milk.                        Thermomix: Put the chocolate in the mixing bowl and grind for 5-6 seconds / speed 8. Now add the milk, cocoa and cornstarch, the rest of the vanilla and salt and heat for 9 minutes / 90 ° C / speed 3. Then beat until foamy for 20 seconds on level 10.
  • Season the hot chocolate to taste again and, if necessary, add icing sugar (depending on the chocolate). At will (homemade) Add Baileys.
  • Now this is filled into the prepared cups and decorated with the cream. The best way to do this is to put the cream in a piping bag or a Garnish syringe filled and then “draped” on the hot chocolate.
  • Decorate with marshmallows, chocolate shavings and, if you like, some Baileys.
  • Enjoy it ... ☺
