Pasta with a light salmon cream sauce

Today I have a very simple and quick lunch for you: pasta with a light salmon-cream sauce. Even if this salmon-cream sauce is not quite as powerful (as usual), it still tastes super delicious. And this delicious pasta dish is not only quick to prepare and easy to cook, it also looks great with a good glass of wine ... ♥

My pasta with salmon-cream sauce can also be prepared very well with linguine, spaghetti or ribbon noodles. That's how I originally thought it would be for this delicious dish. But my kids have a “Spirelli phase” at the moment and ONLY want Spirellis. So unfortunately you have to be satisfied with the Spirellis in the picture. 😉 Normally I would also mix the parsley or the dill into the sauce, but my two don't like that at all ... then not at all. So I just sprinkle the herbs over the food. But it's best to mix them into the sauce right away, because then the taste will combine a little better. But that's the way it is in the family. One doesn't like this, the other prefers that. You probably know too well ... The everyday madness doesn't stop at us either. 😉

But since this pasta dish is really so delicious, I didn't want to wait until “after the Spirelli phase”. 😉 I'm an absolute fan of pasta, are you? Then be sure to try mine too spaghetti-pizza and my Pasta al Pesto Rosso. Incidentally, we all like these two noodle dishes very much. In addition, noodles are known to make you happy ... ♥

Ingredients:

(for 4-5 servings)

  • 200 g smoked salmon (I had smoked wild salmon.)
  • 1 onion
  • 2 cloves of garlic
  • 10g butter or oil
  • 100g dry white wine, alternatively vegetable broth
  • 200g Kochsahne (Sahne mit etwa 15%Fett) oder Sahne
  • 200g milk, low in fat
  • 30 g flour (instant flour or type 405)
  • optional: some fresh parsley or dill
  • Salt pepper
  • Nutmeg, grated
  • 1 squirt of lemon juice
  • 1 pinch of sugar
  • Parmesan cheese, grated as required
  • approx. 400-500g pasta

 

Prepare pasta with light salmon cream sauce:

  1. Cook the pasta according to the instructions on the packet.
  2. During this time, prepare the salmon-cream sauce:
  3. Finely chop the onions and garlic.
  4. Melt the butter in a saucepan and sauté the onion and garlic until translucent.
  5. Mix the flour with part of the milk until smooth.
  6. Deglaze the onions and garlic with the white wine.
  7. Add the rest of the milk and the cooking cream and bring to the boil briefly.
  8. Add the mixed flour, stir in well and simmer at low temperature for a few minutes. Stir occasionally.
  9. During this time, cut the smoked salmon into fine strips and finely chop the dill or parsley if necessary.
  10. After the cooking time, season the sauce with salt, pepper and nutmeg as well as a splash of lemon juice.
  11. Add smoked salmon and, if necessary, herbs, fold in carefully and heat for about 1-2 minutes.
  12. Season the salmon-cream sauce again to taste and mix with the cooked pasta.
  13. To serve, sprinkle with some grated Parmesan cheese.

Preparation in the Thermomix®:

  1. Cook the pasta in a saucepan according to the instructions on the packet.
  2. During this time, prepare the salmon-cream sauce:
  3. If necessary, chop up some dill or parsley for 3-5 seconds / speed 8 and transfer.
  4. Halve the onions and place in the mixing bowl with the garlic, chop for 5 seconds / speed 5.
  5. Add the butter in pieces and sauté for 4 min. / 120 ° C (TM31 Varoma) / speed 1.
  6. Add the remaining ingredients, except for the salmon, and cook for 10 minutes / 100 ° C / speed 2.5.
  7. During this time, cut the smoked salmon into strips.
  8. After the cooking time, season the sauce with salt, pepper and nutmeg as well as a little lemon juice and puree for 20 seconds / speed 10.
  9. Add the smoked salmon and, if necessary, herbs and stir for 2 minutes / 90 ° C / gentle stirring Counterclockwise rotation heat.
  10. Season the salmon-cream sauce again to taste and mix with the cooked pasta.
  11. To serve, sprinkle with some grated Parmesan cheese.
