Today I brought an irresistibly delicious cherry crumble cake for you. A particularly fluffy and juicy sheet cake made from sponge mixture that is baked super quickly. It can of course also be topped with other fruits, but now it's cherry time and with fresh cherries this crumble cake tastes absolutely heavenly ... ♥

Cherry Sprinkle cake

Cherry crumble cake, I don't need to say much about this delicacy. Simply a really great summer cake for afternoon coffee. For me, it's not just pleasure, but soul food, Sunday cake, favorite cake and childhood memory all rolled into one. In summer with fresh cherries, as a great way to use the cherries from the garden. And as long as cherries are in season, this should of course also be used. Okay, you can argue about the stone. This really is a tiresome and arduous task without one Cherry pitter.

And when it has to go particularly quickly or in the cold season, the sheet cake with cherries from the glass is particularly quick and easy to bake. Crumble cake is always and at every coffee party! Especially when it is of course home-baked and tastes much better and fresher than it was bought anyway. But I don't need to emphasize that again at this point. Absolutely great sprinkles love! Batter

  • 350 g flour
  • 1 Sachets of baking powder
  • 200250 g sugar (depending on the sweetness of the cherries) (I: 200 g)
  • 350 g Natural yogurt (I: yogurt with 3.5% F)
  • 150 g Oil (tasteless or rapeseed oil with butter flavor)
  • 30 g Amaretto (or orange juice)
  • 4 Eggs (size M)
  • 1 TL Homemade vanilla extract (or 1 prize ground vanilla)
  • 1 Pinch of tonka bean, grated
  • 1 pinch of salt

Sprinkles

  • 250 g flour
  • 150 g butter
  • 100 g Marzipan (raw mixture), cold (optional)
  • 100 g sugar
  • ½ Teaspoon vanilla extract homemade (or 1 prize ground vanilla)
  • 1 Pinch of tonka bean, grated
  • 1 Pinch of cinnamon
  • 1 pinch of salt

Additionally

  • 2 Glass of cherries (morello cherries) ((à 680 g/ 350 g Drained weight))
  • or
  • approx. 700 g fresh cherries (pitted)
  • in addition, some fat and flour or semolina for the baking pan

Instructions

preparation

  1. Grease a deep baking sheet and sprinkle with a little flour or semolina or line with baking paper.

  2. Drain the cherries well in a colander
  3. Preheat the oven to 180 ° C top / bottom heat (160 ° C convection / hot air).

Sprinkles

  2. Chill in the refrigerator until further processing.

Batter

  1. Beat the eggs, sugar, vanilla extract, tonka bean and salt until light and creamy.
  2. Briefly stir in yogurt, amaretto / orange juice and oil.
  3. Then mix the flour with the baking powder and sift it.
    Mix in briefly but thoroughly.
  4. Spread the dough on the prepared baking sheet.

Covering

  1. Spread the cherries evenly on the dough.
  2. Then spread the crumble over the cherries.
  3. Bake the cake for approx. 40 minutes at 180 ° C top / bottom heat or 160 ° C hot air / convection. (The time can vary greatly depending on the baking pan and oven.)
  4. Do the chopstick test in good time.

    Hello Sonja, my grandson wants exactly this cake with fresh strawberries.
    Is that possible when the berries are fresh and firm?
