Strawberry cake with Yogurette® | Summer cake

Today, for a change, I have a new cake recipe for you for a delicious summer cake: a strawberry cake with Yogurette®. Refreshing, very tasty and nice and fruity. This cake is easy to prepare, fits perfectly into the summer and tastes big and small ... ♥

This strawberry cake ...

... consists of a Viennese base with cocoa and a fruity filling with strawberries and quark. You can also prepare the juicy sponge cake a day before the cake is made. It crumbles less when you cut through it and I find it much less stressful when a cake can be made piece by piece in peace. I like to fill the cake itself the day before it is eaten. This allows it to solidify and cool in the refrigerator overnight. On the day of consumption, I decorate the cake in good time. I tried to make the decoration pretty, but not necessarily lavish. So, in my opinion, the cake would also be beginner-friendly. You can of course decorate the strawberry cake in a completely different way or in a much simpler way. You can find a tip for this under the recipe. I would prefer to put fresh strawberries on the cake shortly before serving anyway, because they are a bit sensitive.

Strawberry cake with Yogurette®

Ingredients

Sponge cake (Viennese mass)

  • 6   Eggs size M (room warm)
  • 200  g of sugar
  • 75  g flour
  • 50 g  strength
  • 25 g Cocoa (baking department)
  • 70  g butter (melted)
  • ½  Teaspoon vanilla extract
  • 1  pinch of salt

filling

  • 500  g strawberries (plastered)
  • 100  g powdered sugar
  • 400  g of cream
  • 250  g mascarpone
  • 250  g low-fat quark or quark with 20% fat
  • 4 Sheet of white gelatin
  • 4 Sheet of red gelatin
  • 1 Teaspoon vanilla extract
  • ½ Lemon, of which the peel is rubbed off
  • 150  g yogurette (approx. 12 Piece) (optional)

Decoration

  • 100  g yogurette
  • 1012 Strawberries
  • 200300 g of cream
  • 23 Tl SanApart or cream stiffener

Instructions

Sponge cake (Viennese mass)

  1. Line the bottom of a springform pan (26 cm) with baking paper.
  2. Preheat the oven to 170 ° C top / bottom heat (150 ° C hot air).
  3. Beat the eggs, a pinch of salt and sugar to a creamy, light-colored mixture. (Quietly for 10 minutes at high speed.)
  4. Mix the flour, cocoa and starch and sieve to it. Fold in carefully.
  5. Very carefully fold in the melted butter as well.
  6. Pour the dough into the prepared form and bake for approx. 35 minutes. (Please do the chopsticks test in good time, as every oven bakes differently.)
  7. After baking, remove from the mold and let cool down completely, covering with a tea towel.

filling

  1. Soak the gelatine according to the instructions on the packet.
  2. Puree 300 g strawberries and briefly bring to the boil together with the sugar and vanilla. Let cool for about 10 minutes. Squeeze out the gelatine and dissolve it in the strawberry mixture. Let cool down lukewarm.
  3. Meanwhile, cut 200 g strawberries into slices or cubes. Roughly chop the yogurette or cut into thin slices.
  4. Whip the cream until stiff and put in a cool place.
  5. Mix the quark, mascarpone and lemon zest until smooth. Stir some of the quark mixture and the strawberry mixture. then mix the entire strawberry mixture with the quark mixture.
  6. Then carefully fold in the cream.
    Then fold in the strawberry pieces and yogurette.
  7. Cut the biscuit horizontally in the middle. Place the lower part on a cake plate and with one Cake ring* enclose.
    Pour in the cake filling and carefully place the second sponge cake on top of the cream and press lightly.

    Chill for at least 4 hours (better overnight).

  1. Cut the yogurette into thin slices or use a peeler to cut into circles.
    Halve 6 strawberries. Cut the rest into thin slices.
  2. Beat the cream with the SanApart / cream stiffener until stiff.
  3. Remove the cake ring and smooth the edges again if necessary.
  4. Spread a thin layer of whipped cream on the cake all around.
  5. Decorate with the strawberries and yogurette as desired.
  6. Keep in the refrigerator until consumption.

Notes

If desired, the cake can also be served plain and simple without lavish decorations. To do this, remove the chilled cake from the cake ring and dust with a little icing sugar.

  3. Meanwhile, cut 200 g strawberries into slices or cubes. Roughly chop the yogurette or cut into thin slices.
  4. Rinse the mixing bowl (rinse again with cold water!). Whip the cream together on level 3 without setting the time and with visual contact (!) Until stiff. Transfer and refrigerate.
  5. Put the quark, mascarpone and lemon zest into the mixing bowl, stir until smooth for 20 seconds / speed 3.
    Stir some of the quark mixture into the strawberry mixture. Then pour the entire strawberry mixture into the mixing bowl and stir in for 20 seconds / speed 3.
    Carefully fold in the cream with the spatula.
    Then fold in the strawberry pieces and yogurette.

    The cake was delicious!
    However, I have a few small comments:
    - The ingredients for the biscuit do not list how much baking powder is required, but which is listed under the preparation.
    - The preparation for the filling does not include when the zest of the lemon is added.

    I had now improvised and it worked well.

      the dough works fine without baking powder. The prerequisite, however, is a really good and lightly creamy whipped egg. When you feel more confident, you can add a pinch of baking soda.
