Strawberry dream (dessert in a glass)

Today I have a particularly delicious and spring-like recipe for you ... A fruity strawberry dream: A layered dessert in a glass that is easy to prepare and will enchant your guests (and you too, of course) ... ♥

And the best thing about this strawberry dream dessert:

It is relatively quick and easy to prepare. In principle, you can serve it immediately after preparation. You can also prepare it the day before (without decoration) if it is kept cool afterwards. For longer storage, I would recommend that you boil the sauce beforehand - without gelatine, of course. This must then be added later when the strawberry sauce is no longer too hot.

Of course, you can easily double or even triple the strawberry dream for more than four people. In Mason jars filled, this dessert can easily be stored in the refrigerator until consumed. I find these little glasses very practical because they can be used in so many ways. I am happy to fill it with homemade yoghurt or homemade jam. In any case, the glasses are always well received by our guests, even though they are actually not dessert glasses. In the refrigerator, I close the Weck jars either with the corresponding glass lids or with the appropriate (and extremely practical) Plastic lids.

Strawberry dream (dessert in a glass)

Ingredients

cream

  • 200 g Mascarpone (or cream cheese)
  • 200 g Quark with 20% fat ((low-fat quark also works))
  • 50 g powdered sugar
  • ½ Teaspoon vanilla extract
  • some grated lime peel (or lemon peel)
  • 1 Pinch of grated tonka bean ((just a touch))
  • 200 g Whipped cream
  • 2 Tl cream stiffener or SanApart
  • 1 Tbsp powdered sugar

Strawberry sauce

  • 400 g fully ripe strawberries
  • 2 El Licor 43 (vanilla liqueur) (or raspberry syrup)
  • 2 Tbsp raspberry syrup
  • 1 Splash of lime juice
  • ½ Teaspoon vanilla extract
  • 12 Tbsp powdered sugar ((may not be necessary depending on the sweetness of the strawberries))
  • 10 g Instant gelatine ((= instant gelatine))

Instructions

Strawberry sauce

  1. Set aside two beautiful strawberries for decoration later.
  2. Remove the remaining strawberries from the stalk, if necessary halve depending on the size.
  3. Then puree together with the remaining ingredients for the strawberry sauce with finely. Then temporarily store in the refrigerator.

cream

  1. Mix the mascarpone and quark, vanilla extract, lime zest and some grated tonka bean until creamy.
  2. Beat the cream with 1 tablespoon powdered sugar and 2 teaspoons cream stiffener or SanApart until stiff.
  3. Fold about ⅔ of the cream into the cream (the rest for the decoration).

completion

  1. Layer the cream and sauce alternately in the four dessert glasses. Finish with the sauce.
  2. Cut the strawberries that have been set aside once in the middle lengthways.
  3. Decorate with the rest of the cream and ½ strawberry each. (Keep in the refrigerator until ready to be eaten.)

Notes

 

If necessary, use frozen strawberries and let them thaw before preparation.

As an alternative to the homemade vanilla extract, I can do this Vanilla paste * recommend.

  1. Insert butterfly. Put the cream with 1 tablespoon powdered sugar and 2 tablespoons cream stiffener / SanApart in the mixing bowl. Beat until stiff under visual contact without setting the time / level 3.5. Then decant.
  2. Put the mascarpone and quark, vanilla extract, lime zest and some grated tonka bean in the mixing bowl, stir until creamy for 20 seconds / speed 4.
  3. Fold about ⅔ of the cream into the cream (the rest for the decoration).
