Eggnog pudding with cherry sauce

Today I brought you another delicious dessert from the glass that is easy to prepare: Eggnog pudding with cherry sauce. Cooked quickly and easily and kept rather simple. But still super tasty - not only at Easter. ♥

... is also ideal for using up remaining egg liqueur. Or of course just like that ... Because as an alternative to the popular chocolate pudding  This delicious egg liqueur pudding with cherry sauce is not to be despised. You can use classic eggnog, of course best homemade or other special types of eggnog. These make for a great variety in taste. As a "classic" I can give you my recipe for Grandma's egg liqueur recommend. As “special varieties” I would still have Orange vanilla egg liqueur with Licor 43 or Eggnog with amaretto (alcohol-free possible) in the repertoire.

But back to the recipe ...

The combination of custard and egg liqueur is simply unbeatable. That's why I recently got my mega delicious Eggnog tart published here on the blog. When this already delicious combination of pudding and eggnog is accompanied by a delicious fruity sauce, there is hardly anything better. In this case I chose cherry sauce. Of course, you can also choose another fruit of your choice. For example raspberries, mixed berries, mango or simply sweetened strawberries would be well suited. The strawberry season has only just begun. I think they would almost go best with this egg liqueur pudding as an alternative to cherry sauce. Unfortunately, when I cooked it, there weren't any strawberries. How I like to bag my strawberries, I'll tell you in my recipe for Yogurt panna cotta with strawberries. Eggnog pudding with cherry sauce

Ingredients

Eggnog pudding

  • 350 g milk
  • 100 g Advocaat
  • 60 g cream
  • 1 Custard powder “vanilla” or “cream”, (alternatively 40 g Food starch)
  • 40 g sugar
  • 1 Teaspoon vanilla extract

Cherry sauce (enough for more than 4 servings)

  • 1 Glass of cherries á 680g, (350g Drained weight)
  • 1 Pack of vanilla sauce powder “to cook” (or 18g Food starch)
  • 25 g sugar
  • 1 Teaspoon vanilla extract
  • 1 Pinch of grated tonka bean ((optional))
  • 12 Tbsp amaretto ((optional))

Instructions

Eggnog pudding

  1. Mix the custard powder / starch with about 6 tablespoons of the milk until smooth. 
  2. Bring the rest of the milk, cream, vanilla extract and sugar to the boil while stirring. Stir in the mixed pudding powder / starch and bring to the boil briefly. 
  3. Let cool down a little, then stir in the egg liqueur.
  4. Fill the finished egg liqueur pudding into four dessert glasses and place in the refrigerator for at least 4 hours.

Cherry sauce

  1. Drain the cherries in a colander, collecting the juice in a saucepan.
  2. Set the cherries aside and stir the collected cherry juice with the remaining ingredients until smooth.
  3. Bring to the boil briefly, stirring constantly.
  4. Then carefully fold in the cherries and heat them briefly.
  5. Season again to taste and let cool down.

completion

  1. To serve, spread the cherry sauce on the cooled egg liqueur pudding. 
  2. The pudding and sauce will keep in the refrigerator for several days.

Instructions

Eggnog pudding

  1. Insert butterfly. 
  2. Put all the ingredients for the pudding in the mixing bowl, cook for 7-8 min / 90 ° / speed 2.
  3. Fill the finished egg liqueur pudding into four dessert glasses and place in the refrigerator for at least 4 hours.

Cherry sauce

  1. Hang the fermentation basket in the mixing bowl, drain the cherries in it and collect the cherry juice in the mixing bowl.
  2. Remove the proving basket again and add the remaining ingredients.
  3. Mix for 20 seconds / speed 3.
  4. Reattach the proofing basket and bring to the boil for 6-7 min. / 100 ° / level 3.
  5. After the cooking time, add the cherries to the mixing bowl and carefully fold in with the spatula (or mix immediately in a bowl).
  6. Season again to taste and let cool down.

  1. To serve, spread the cherry sauce on the cooled egg liqueur pudding. 
  2. The pudding and sauce will keep in the refrigerator for several days.
