This is not the best time to make many resolutions for the new year that has just started, but the cookies taste soooo delicious ...
And now after Christmas, in the dark season, sometimes something really chocolaty is the best soul food against the winter blues.

Ingredients:

(for 20-24 pieces)
  • 125g soft butter, cut into pieces
  • 100g sugar
  • 100g brown sugar
  • 1 teaspoon vanilla extract or 1 bag of bourbon vanilla sugar
  • 1 egg 
  • 1 pinch of salt
  • 180g flour (also spelled if you like)
  • 20g baking cocoa
  • 1 teaspoon Baking powder
  • 80g dark chocolate chunks (Alternatively, dark chocolate, roughly chopped.)
  • 80g white chocolate chunks (Alternatively, white chocolate, roughly chopped.)

If you don't want to have any chocolate leftovers (or if you want to eat them), you can use 100g chocolate instead of 80g each. 

 

 

preparation:

 

  • Preheat the oven to 160 ° C convection / 180 ° C OU heat.
  • Mix the butter with the sugar, the brown sugar, the vanilla extract / sugar and the egg until frothy. Thermomix 30 sec / level 4 (hand mixer: blender, Kitchen Aid or other kitchen appliance: flat or flexible stirrer)
  • Add the flour, cocoa, salt and baking powder and mix everything together to form a homogeneous dough (Thermomix 40 sec / level 4).
  • Finally add the Chocolate Chunks and fold in (Thermomix 30 sec / step 2.5 counterclockwise).
  • Use an ice cream scoop to divide the dough between two magic stones or two baking sheets lined with baking paper.
  • Then bake in the preheated oven for about 15-20 minutes (depending on the size of the cookies). With OU heat, the cookies must be baked one after the other. The cookies can also be baked with hot air, in this case also on the stoneware.
  • After the baking time, let the cookies cool down a little and then let them cool completely on a wire rack.
